I have to admit when I first saw this flourless pancake recipe doing the rounds on Pinterest I totally ignored it, only because I thought no way could they be like normal pancakes and they would probably taste awful!
Since giving up regular wheat flour I have been tempted to try many
different recipes, so in honour of pancake day today I decided to road test this simple easy one!
How wrong I was, the pancakes turned out fab and tasted divine so these will be my go to lunch snack when I crave a sweet treat from now on!
Ingredients (makes 3-4 small pancakes)
1 large banana
2 eggs
coconut oil for frying
Mash the banana well in a bowl.Whisk the two eggs in a jug, add to the mashed banana and blend with a mixer until you have a batter like consistency.
Melt a small dollop of coconut oil on the pan and add a tablespoon at a time of the banana batter mixture to it!
Fry for a minute then flip over when bubbles start to appear on top, cook the other side for another minute. This is where I noticed a slight difference, it can be a little fiddly to flip them as the batter is a tad soggier than flour pancakes! There was definitely no tossing up in the air done!!

I sieved some icing sugar over mine when they were cooked and served with a drizzle of maple syrup and blueberries on the side! You could add any fresh fruit you fancy or sliced banana with a dollop of cream would be delicious also:)
